Breakfast Cups

M and I (Michelle) made some breakfast cups this morning.  For those of you who are an "ireallylikefood" follower, yes, we got this recipe straight from one of their blogs many months ago.  We forgot to take pictures of the entire process, but we definitely have the end result and it was amazing! Possibly one of the best breakfast foods we've made in a very very long time.

Golden ooey gooey goodness!

Ingredients

Bread
Eggs
Ham (or bacon)
Salt n Pepper
Cooking spray

1.  Spray your muffin tin with cooking spray.
2. Use a whole slice of bread and put into mold making a cup shape.
3.  Toast bread for about 4 minutes at 375 degrees F.
4.  Add ham into cup.  We used whole slices of thinly sliced ham.
5.  Crack in eggs, unbroken. Salt n pepper to flavor.
6. Bake for about 15-20 minutes.  20 minutes for a more cooked yolk.
7. Plate and MUNCH!

Fried Tofu Satay + Strawberry Daquiri

After reminiscing about a few of M and I's hot dates, I suddenly had a craving for some Chicken Satay.  The dish is composed of some chicken bits, usually on skewers, and a peanut butter coconut milk sauce. Yum!  Since I'm attempting to cater to my wanna-be vegetarian needs, I used some fried tofu instead.  A small twist on otherwise an awesome appetizer or snack!

 

Simple ingredients for a flavorful sauce.
You'll need Chicken Broth, Peanut Butter, Coconut Milk, Curry Powder, Brown Sugar, Soy Sauce, Lime Juice, and Salt to taste.

 

I had one cup of chicken broth already in the pot.  Add 1 c coconut milk.

1 spoon curry powder

1/2 c smooth creamy peanut butter
Also add about 1/3 c brown sugar

Throw it all into your pot and stir constantly for about 5 minutes until thick.

At this point, you can add your lime juice and a spoon or two of soy sauce and some salt to taste.

Turn the heat to your sauce off and remove from stove and just let it sit.
Dice up some firm-extra firm tofu. I used extra firm.

Coat your freshly diced tofu in some flour.

Fry fry fry! Make sure your oil is HOT and the oil comes up to about half of the size of your tofu.
Flip after 3-4 minutes or brown on the underside. Repeat until your whole tofu is golden brown.

Throw your fried tofu on a paper towel to absorb excess oil.  At this point, you can also salt your tofu as well.
The fried tofu tastes delicious on it's own, btw!

Plate your sauce and tofu bits however you want!  By now, you guys can tell that this square flower plate is one of my favorites...

This dish is delicious, but also very very rich.  To cut down on the richness, use 1 1/2 c chicken broth and a little more lime juice.
For me, I opted for a Virgin Strawberry Daquiri.

A simpler recipe for a nice refreshing drink in the summer.
Frozen strawberries w/ sugar, 1 lime, sugar.

Juice one lime into your blender food processor. Same results, smaller item to wash.

Add in your frozen strawberries + sugar. However much you want!

Blend blend blend!

Sugar Coat your glass.

Enjoy your Strawberry Daiquiri with your Fried Tofu Satay!

Tofu Satay

1 C Chicken Stock
1 C Coconut Milk
1/2 C Peanut Butter
1/3 C Brown Sugar
Juice of 1 Lime
1 Tbs Curry Powder
1 Tbs Soy Sauce
Salt n Pepper to taste

Strawberry Daiquiri

Frozen Strawberries in Sugar
Juice of 1Lime
Sugar (optional)
